Asparagus and Artichoke Starter with Parmesan Cheese

Intensely flavourful and elegant starter that is easy to make.

This intensely flavourful and elegant cold starter is one of our favourites and easy to create yourself.

  • 10 asparagus
  • 1 cup artichoke hearts
  • 1/2 cup sundried tomatoes
  • 75 g parmesan cheese, shaved into slivers
  • balsamic vinegar
  • olive oil
  • salt & pepper


Do the asparagus in advance. Boil or steam them until just tender then let cool. Place all vegetable ingredients on a deep plate, sprinkle with the parmesan slivers, drizzle with olive oil and dot with balsamic vinegar, then season with salt and pepper to taste and serve. Enjoy with a crisp white wine.
