These Spanish style burgers are oh so easy to make and delicious to taste.

A classic hamburger with the distinctive sweet and smoky flavour from wood-burned piquillo peppers.

  • 600g  beef mince (we like the beef brisket)
  • 1 egg
  • salt and freshly ground black pepper
  • 50g piquillo pepper slices
  • 4 slices of white cheddar cheese (or any other rich cheese)
  • 1 large white onion
  • salad leaves
  • 4 quality buns 
  • 150 ml mayonnaise
  • 1 tbsp (grainy) mustard
  • oil
  • butter


Combine mince and egg in a bowl, season with salt and pepper. Make four patties. For the best result leave overnight in the fridge.
Turn on the oven to 220°C for buns and French fries.
Peel and cut the onion in thick rings.
Mix the mayonnaise with the mustard to create the dressing.


Heat some oil in a frying pan, preferably a grill pan, and add the onions to caramelise on both sides. Cook patties over medium-high heat in same pan for approximately 4 minutes on each side. (If it is a sunny day you can cook burgers on the BBQ.) When the burgers are almost done brush them with some melted butter.
Grill the buns in the oven or in the pan.
Top the patties with the cheese and put in the oven until the cheese melts.
Spoon the dressing on the insides of top and bottom of the bun. Place some lettuce on the bottoms of the buns then the patties on top of the lettuce. Now add the piquillo pepper slices and finish off with the grilled onion. Cover with the top of the bun and serve with crispy fries.
